Critical Thinking about You in the Culinary Arts 2008-09-10
I have had the honor to be in Chef Leake's class. He has not only taught me the fundamentals of cookery, but to think critcally about not only what he has taught, but about why I am in the Culinary Program, which is what this book is about. The book has main topics and within those topics there are a series of questions that you answer based upon what you think and feel. For example, "What does it mean to be a Chef? What are some shortcomings that could stop you from reaching your culinary goal? Everyone says you should own your own restaurant, so why even listen to anything the instructor says?" There is no right or wrong answer, but, based upon your answers, this book really makes you step back and examine you as a person, and if Culinary Arts is right for you. There are 125 pages of topics with questions to answer, and 18 quotes or "words of wisdom" from Chefs in the industry. I would highly recommend this book.
